Nan khatai is an egg-less mild and crispy biscuit that is excellent to serve with tea or espresso.

  • 1/3 cup all function flour plain flour or maida
  • 1/3 cup high quality sooji samolina
  • 1/8 tsp baking soda
  • 1/4 tsp cardamom coarsely floor ilaichi
  • 1/2 cup unsalted butter
  • 2/3 cup sugar
  • 1 tbsp almond sliced
  • 1 tbsp pistachio sliced
  • Pre warmth the oven to 375 diploma.

  • In a bowl, combine the all-purpose flour, gram flour, sooji, baking soda and cardamom powder and put aside.

  • Let the butter come to the room temperature (butter needs to be gentle not melted)

  • Add butter and sugar in a mixing bowl and beat for 2 to a few minutes till mild and fluffy.

  • Add the flour combine to butter and sugar combination and knead them collectively to make clean dough. Divide the dough into about 24 equal components and make them into balls. Press every ball between your palms flippantly; each piece needs to be about 3/4″ in thickness.

  • With a pointy knife softly draw a tic-tac-toe design on the highest and put few items of almonds and pistachios and press them into the dough gently.

  • Put Nan khatai on a flippantly greased cookie sheet and bake at 375 levels for about 13 to fifteen minutes or till Nan khatai are flippantly gold brown.

  • After they’re flippantly golden brown take away the cookie sheet from the oven. Let the Nan Khatais settle down for 2 to a few minutes earlier than taking them off the cookie sheet.
