Holiday Lentil Loaf Frosted with Mashed Potatoes


4 to five cups heat mashed potatoes (see beneath)*

Veggie Lentil Loaf

1 giant candy onion, diced
1 purple bell pepper, diced
1 or 2 stalks celery, diced
1 clove garlic, minced
2 cups recent child spinach or energy greens, roughly chopped
3 cups cooked lentils
3 cups rolled oats
2 cups cooked candy potatoes (about 2 medium), skins eliminated
2 teaspoons smoked paprika
2 teaspoons salt, or to style
1 teaspoon cumin
1 teaspoon turmeric
1/2 teaspoon black pepper


1/4 cup no-sugar-added BBQ sauce (I really like Date Girl BBQ Sauce)
2 tablespoons yellow mustard, or to style



Put together mashed potatoes (see beneath)* and put aside.

Whereas potatoes are cooking, preheat oven to 400 levels. Have prepared 2 silicone commonplace dimension loaf pans, or 2 (6-cavity every) mini-loaf pans.

Spoon combination evenly into loaf pans. Drizzle or brush glaze over loaves.

Bake for 20 minutes. Rigorously take away pans from oven, and “frost” with mashed potatoes, protecting every loaf with as a lot as you would like. Refrigerate additional mashed potatoes for one more use.
